🔹️1 cup steamed pumpkin (could use sweet potato)
🔹️3 Tbs sunbutter
🔹️60g protein powder
🔹️ 1/3 cup coconut flour
🔹️1 Tbs raw cacao
🔹️2 tsp coconut oil
Mix together until its smooth dough consistency.
Roll out and cut into cookies.
Place in the fridge.
Chia Jam: 🔹️1/4 cup thawed frozen raspberries
🔹️1/4 pink dragonfruit
🔹️1 Tbs chia seeds
🔹️2 tsp pysillium husk
Mash berries and mix in chia seeds and pysillium.
Leave to thicken before scooping onto the biscuits.
Return to fridge to firm and cool
🔹️1/2 cup coconut oil
🔹️3 Tbs raw cacao
🔹️1 tsp vanilla extract
🔹️3 scoops stevia powder (can use 2 Tbs rice malt syrup or maple)
Whizz together in a blender or with a whisk.
Dip the cookie and jam into the chocolate to coat.
Return to the fridge to set.
