If you follow my Instagram you’ll see that I have been experimenting with cauliflower.
Such a versatile vegetable. I love using it in place of rice, mash potato, pizza bases or even pureed as a base for “white sauce” or cheese sauces… I will get to these in the near future.
But I have also been using cauliflower for sweet breakfast recipes. I find it work ms perfectly in smoothies to give the same thickness and creaminess you would get from banana, without the carbs and sugar.
So yes! These waffles contain cauliflower!! They have the most fudgy texture. Like chocolate pudding …drool… ok, now go make em!
You will need
1/4 head of cauliflower riced & steamed
2 egg whites
2 Scoops (50g) favourite protein powder
2 tsp raw cacao
1 tsp baking soda
Blend all ingredients together and cook to waffle maker instructions.
I have been using a plant based protein powder from nuewee. It is naturally sweetened using stevia. If your protein powder is unflavored, then add your preferred sweetener to the mix.
