Peanutbutter+jelly pancakes



1/2 pitaya

2 tsp Chia seeds.

Blend pitaya in a a magic bullet until saucy. Stir in Chia seeds and allow to sit while making the pancakes


1/2 cup oats

1 scoop protein powder

2 eggs whites

1/4 cup dairy free milk

2 tsp natural peanutbutter

1/2 tsp vanilla extract

1 tsp baking powder

**Sweetener if needed

Coconut oil for cooking.

Blend all ingredients together. Heat coconut oil in a pan and cook batter 2 Tbs at a time. Flip pancakes once bubbles appear and burst. 

Top with natural peanutbutter and pitaya.
