Pink pitaya breakfast bowl

200g soft tofu

1/4 red dragonfruit 

1/4 frozen banana

1 Tbs protein powder

1/2 tsp vanilla extract

2 tsp rice malt syrup 

Blend tofu, protein powder, banana, vanilla, and rice malt syrup until smooth. Put aside 2 tablespoons of the mixture. Add dragonfruit to the larger portion and blend until smooth. 

Pour into a bowl and swirl the 2 Tbs of mixture on top. Then finish with your favourite toppings. I have used banana, dried purple sweet potato and puffed barley
