Vegan cherry ripe

One of my favourites in my early teens. And living in new Zealand the only way I could get to one was in mini form in a box of cadbury favourites. I don’t know own why they didn’t sell the actual bar I  new Zealand. No wonder I piled on the kilos when I eventually moved to Australia and there they were in full size in every shop, everywhere! When I stopped eating sugar I didn’t want to miss out on my favourite treat so I made my own. These can be made with raspberries when cherries aren’t in season. Mmm raspberry ripe… just as good! 

Base 1 cup almonds

1 1/2 cups dessicated coconut

2 Tbs raw cacao

Tbs rice malt syrup
3 Tbs coconut oil

Process until it all comes together and press into moulds or lined cake tin.

CHERRY CENTER 

1 cup thawed frozen cherries

1 1/2 cups dissicated coconut 

3/4 cup raw cashews

2 Tbs rice malt syrup

3 Tbs coconut oil

Process cashews first until fine. Add the rest of your ingredients and blend until smooth. 

Pour evenly over bases and pop into the freezer to firm

RAW CHOCOLATE 

1/2 cup coconut oil

3 Tbs raw cacao

2 Tbs rice malt syrup

Blend in magic bullet and pour evenly over top of cherry layer. Return to the freezer and allow to set over night
