Raw vegan Twix

This one was a special request from my friend Sarah. I hope you love it x

RAW CHOCOLATE 

1/2 cup coconut oil

1/4 cup raw cacao powder

2 Tbs rice malt syrup

Blend. Pour a thin layer into a loaf pan and pop in the freezer to set.

BISCUIT LAYER

1 1/2 cups cashews ( blended to a flour and toast in the oven until fragrant, but not brown)

1/2 cup coconut flour

2 Tbs coconut oil 

1/4 cup water

2 TBS rice malt syrup

2 tsp vanilla extract 

Pinch of salt.

Whizz all ingredients in a blender to form a dough.

Halve, and press one half over the chocolate base .

CARAMEL

1 cup dates

2 Tbs Almond butter

1 Tbs coconut oil

1 Tbs water

1 tsp vanilla extract

Pinch of salt.

Whizz until smooth. Halve,  Pour half over biscuit layer.pop in the freezer to firm.

Top with other half of biscuit layer. Then the last of the caramel.

Top with remaining raw chocolate. 

Set in the freezer over night and slice
