Raw vegan mint slice 

BASE

1 cup ground almonds

1 cup dessicated coconut 

3 Tbs raw cacao powder 

2 Tbs coconut oil

2 Tbs rice malt syrup

PEPPERMINT CENTER 

2 cups cashews  (soaked overnight and blended until smooth)

1/2 cup coconut cream

3 Tbs rice malt syrup 

1/3 cup coconut oil

2 tsp peppermint extract

1 tsp matcha powder 

1/2 tsp spirullina powder

RAW CHOCOLATE TOPPING

1/3 cup coconut oil 

2 Tbs raw cacao powder 

1 Tbs rice malt syrup 

Blend all base ingredients and press into a lined cake tin or loaf tin

 Blend all peppermint ingredients u til smooth and pour over base. Pop into the freezer to chill.

Blend chocolate topping and pour on top. Leave to set in the fridge over night
