Raw vegan jaffa cakes

BASE

1 cup almonds

1 cup dessicated coconut

Zest and juice of 1 large orange

1 Tbs raw cacao powder

2 Tbs rice malt syrup

2 Tbs coconut oil

1 tsp vanilla extract 

Process until all comes together.  Press into silicone muffin moulds and pop in the freezer

ORANGE LAYER

1 cup soaked cashews 

1 cup dessicated coconut 

Zest and juice of 1 large orange

2 Tbs rice malt syrup

1 Tbs coconut cream

2 TBS coconut oil

Process until smooth

Spoon over base and pop in the freezer to set. 

CHOCOLATE TOPPING 

1/3 cup coconut oil

2 Tbs cacao powder

1 Tbs rice malt syrup

Blend and drizzle over the tops.
