Vegan Ginger Slice

 Gluten, dairy, sugar freeeee for a happy tummyyyy 

BASE 

1 cup almond meal

3/4 cup cashews (ground)

1 1/2 teaspoons ground ginger

Pinch of Himalayan Salt

2 Tbs coconut oil

2 Tbs rice malt syrup

Pre heat oven to 150°C  and toast the almond meal and cashews for 5 minutes until aromatic. Add the the food processor with the rest of the base ingredients and blend. Press into a lined loaf pan and pop into the freezer to firm

TOPPING

1/2 cup fresh pitted medjool dates

2 Tbs rice malt syrup

2 tsp ground ginger

process dates first into a paste. Then add coconut oil and ginger. Spread evenly over the base and leave in the freezer to set over night before slicing
