Peanut satay chicken

Anything with peanut butter ❤❤

This version is paleo friendly.. Gluten free, dairy free, sugar free, 

500g chicken breast sliced

Mixed veggies of choice (I use broccoli and red capsicum)

1/2 brown onion diced

2 cloves garlic-crushed

1 red chilli sliced

1 Tbs ground cumin

1 Tbs ground coriander 

1 Tbs coconut oil

Juice from 1/2 a lime

3 Tbs crunchy natural peanubutter

2 Tbs shredded coconut

1 tsp liquid aminos

Heat coconut oil in a fry pan. Add onion and garlic and cook for 1 minute. Add peanutbutter, coconut, lime juice, aminos and 1 cup of water. Stir until combined. Simmer on low for 10 minutes. In a seperate pan brown chicken and add veggies. Cook for 1 minute or so, then add the sauce to the chicken and cook for a further 5 minutes. 

Serve with cauliflower rice
