Paleo Chocolate Birthday Cake

CHOCOLATE CAKE

2 cups Almond flour

1 cup cacao powder

1/2 cup coconut flour

2 tsp baking powder

1/2 tsp Himalayan Salt 

1 cup rice malt syrup

1 cup coconut oil

4 eggs

1 cup dairy free chocolate chips

Pre heat oven to 180°c 

In a bowl combine dry ingredients.

Add rice malt syrup and coconut flour and mix well.

Add the eggs and mix well.

Stir in the chocolate chips and pour batter into a lined cake tin. 

Bake for 35 minutes or until a skewer inserted comes out clean

Remove cake from tin and cool. 

FROSTING

1 cup dairy free chocolate chips

3 Tbs coconut oil

1 Tbs rice malt syrup

Melt chocolate in a double boiler ( glass bowl over a pot of boiling water ) 

Stir in coconut oil and rice malt syrup. 

Spread evenly over the cooled chocolate cake.
