Clean Eating Chilli Con Carne

Pulling this ftom the archives of 2012!! This was one of the first favourites of mine. Whenever anyone wanted a healthy recipes I was like you have to make this!!!  So good 👌

Serves 4

Ingredients 

500g lean beef mince

2 garlic cloves -crushed

1 onion – diced

1 tsp chilli flakes 

1 tsp paprika

1 tsp cumin 

1 tsp oregano

Salt and Pepper  (to taste)

400g kidney beans 

1 tomatoes chopped

1 cup beef stock

1 Tbs tomato puree

1 Tbs olive oil

Put a large pan on medium heat and add your olive oil, onions and garlic. Cook until til onions become soft.

Add spices (paprika, cumin, oregano, chilli, S+P) and stir through. 

Then add mine and brown ( 5 mins) 

Add tomatoes, tomato paste,beans, and stock. Turn heat to low and allow to simmer for 30-45 minutes with the lid off. 

I like to serve this with cauliflower rice  x
