I have tried countless recipes for gluten, dairy, and sugar free banana breads. Some are ok, some are dry, there’s so.many out there that just aren’t the real deal. This one however, completely sweetener free!! I swear by this recipe for a no fail healthy banana bread. Its so easy you can just throw it all in to the blender and save all the elbow work. You’ll have your sugar & dairy addicts converted too, I promise.
4 very ripe bananas
1/2 cup almond butter
4 Tbs coconut oil
1/2 cup coconut flour
1 Tbs cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
Pinch of sea salt
Pre heat oven to 180°c
In a food processor blend eggs and bananas together first.
Then add the almond butter and coconut oil.
Once these are blended add the coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well.
Pour batter into a loaf pan and spread evenly.
For one large loaf bake for 55 minutes.
For mini individual loafs bake for 18 minutes.
